Smothered Cajun Chicken

This smothered Cajun chicken is an easy slow cooker dinner. Chicken breasts cook with onion, bell pepper, and Cajun seasoning, and green beans are added in the last half hour. Serve over cooked rice.

Ingredients

  • 3 pounds skinless, boneless chicken thighs
  • 1 tablespoon plus 2 teaspoons cajun seasoning, divided
  • 1 tablespoon vegetable oil
  • 3 cloves garlic, minced
  • 1 yellow onion, diced
  • 1 green bell pepper, diced
  • 1 cup water, or as needed
  • 1 tablespoon roasted chicken base, such as better than boullion®
  • 2 cans green beans
  • 1/4 cup butter
  • salt and freshly ground black pepper to taste
  • 1/4 cup chopped fresh parsley
