Sausage Potato & Kale Soup
Mild Italian sausage and potatoes are the foundation for this simple sausage, potato and kale soup. Serve it with slices of whole-wheat bread or a side salad for a complete and satisfying lunch or dinner.

- 8 ounces mild italian sausage, casings removed
- 2 cups chopped yellow onion
- 1 ½ cups chopped celery, plus leaves for garnish
- 4 cloves garlic, minced
- 1 tablespoon tomato paste
- 1 (14 ounce) can no-salt-added diced tomatoes
- 12 ounces baby red potatoes, halved
- 4 cups unsalted chicken broth
- ¾ teaspoon ground pepper
- ¼ teaspoon salt
- 3 cups stemmed and coarsely chopped kale
- 2 tablespoons lemon juice
