Red Bean Ice Cream
This is one of my absolute favorite flavors of ice cream, and I was thrilled to be able to recreate it at home with the help of a Jeni's Splendid Ice Creams base. This is adapted from her Roasted Strawberry & Buttermilk Ice Cream.
Ingredients
- 1 3/4 cups whole milk, divided
- 2 tablespoons cornstarch
- 4 tablespoons (2 ounces) cream cheese, softened
- 1/8 teaspoon salt
- 1 1/4 cups heavy cream
- 1/2 cup sugar
- 2 tablespoons light corn syrup
- 2/3 cup cooked, sweetened red beans (not paste), with syrup drained and reserved
- 3 tablespoons red bean syrup (reserved from above)
