Mud Hen Bars

Mud hen bars are tender and slightly chewy layered bars with a brown sugar cookie base, a chocolate and marshmallow layer, baked under a light meringue topping.

Ingredients

  • cooking spray
  • 1 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon kosher salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup packed dark brown sugar
  • 2/3 cup white sugar, divided
  • 1 large egg
  • 2 large egg whites
  • 1 1/2 teaspoons vanilla extract
  • 1/2 cup semisweet chocolate chips
  • 2/3 cup mini marshmallows
