Moroccan Chicken Tagine
Chef John's Moroccan chicken tagine may be the best lemon chicken recipe of all time. Though it is not strictly a tagine, because it is not cooked in a tagine, it has all the elements—preserved lemon, green olives, saffron—you will find in the traditional recipe.
Ingredients
- 1/4 teaspoon saffron threads
- 1/2 cup chicken broth or water
- 1 preserved lemon
- 3 garlic cloves, peeled, crushed
- 1 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 2 teaspoons paprika
- 1 teaspoon ground cumin
- 1 teaspoon ground ginger
- 1/2 teaspoon aleppo chili flakes
- 1/4 cup chopped fresh parsley
- 1/4 cup fresh cilantro
- 2 tablespoons olive oil
- 2 tablespoons olive oil
- 6 chicken thighs, with skin
- 1 large yellow onion, diced
- 1/4 teaspoon kosher salt
- 1/8 teaspoon ground cinnamon
- 1/8 teaspoon ground turmeric
- 1 cup pitted green olives, halved
