Eggs Benedictwich
Eggs Benedictwich is a handheld twist on classic Eggs Benedict, featuring poached eggs, Canadian bacon, and creamy hollandaise sauce sandwiched between toasted English muffin halves or bread. It’s a convenient, delicious brunch favorite on the go.
Ingredients
- 4 thick slices spiral-cut ham, or your favorite (about 1 pound), cut to fit the english muffins
- 2 tablespoons unsalted butter
- 4 large eggs
- kosher salt and freshly ground black pepper
- 2 cups fresh baby spinach
- 2 tablespoons lemon juice
- 8 large english muffins, sliced in half crosswise, buttered and lightly toasted

- 3 egg yolks
- 1 tablespoon lemon juice, plus more for seasoning
- 1 teaspoon dijon mustard
- 1 tablespoon hot sauce, such as tabasco
- 1 1/2 sticks salted butter, melted and kept warm
