Dubai Chocolate Cake
The key to slicing this cake is to use a sharp serrated knife. Another tip for cutting cake is to use a damp cloth to wipe the knife in between each cut for the cleanest pieces.

- 1-1/2 cups all-purpose flour
- 1-1/4 cups baking cocoa
- 3/4 cup sugar
- 3/4 cup packed brown sugar
- 1-1/2 teaspoons baking powder

- 2 large eggs, room temperature
- 3/4 cup canola oil
- 1 cup 2% milk
- 1 teaspoon vanilla extract
- 1/4 cup hot water or strong brewed coffee
- 3 tablespoons unsalted butter
- 2 cups shredded phyllo dough (kataifi)
- 1 cup pistachio cream
- 2 tablespoons tahini
- 1 cup unsalted butter, softened
- 5 cups confectioners' sugar
- 1/2 cup baking cocoa
- 3/4 cup 2% milk
- crushed pistachios, for garnish
