Cucumber Tomato & Feta Salad
This healthy summer salad takes just 10 minutes to prepare. Serve it alongside grilled chicken, pork or fish, or as part of a vegetarian spread. If you can't find Campari tomatoes or Persian cucumbers, feel free to swap them for whatever variety looks the best at your farmers' market
Ingredients
- 1 ½ tablespoons red-wine vinegar
- 1 teaspoon chopped fresh oregano, plus small oregano leaves for garnish
- ½ teaspoon dijon mustard
- ¼ teaspoon salt
- 3 tablespoons extra-virgin olive oil
- 8 ounces campari tomatoes, cut into wedges (about 2 cups)
- 4 medium persian cucumbers, thinly sliced crosswise
- 1 ½ ounces feta cheese, crumbled
