Chorizo Breakfast Casserole

Chorizo adds heat and umami to this chorizo breakfast casserole, that is super easy to make. Cooking the bell pepper in the rendered fat helps add depth of flavor to the veggies, keeping every element nicely seasoned.

Ingredients

  • cooking spray
  • 1 lb fresh mexican chorizo, casings removed
  • 1 orange bell pepper, finely chopped
  • 1 poblano chile, finely chopped
  • 8 large eggs
  • 2 cups half and half
  • 2 teaspoons garlic salt
  • 1 teaspoon onion powder
  • 1 teaspoon freshly ground black pepper
  • 1/2 teaspoon chili powder
  • 1 cup shredded mild cheddar cheese
  • 1 cup shredded pepper jack cheese or quesadilla cheese
  • 5 cups refrigerated shredded hash browns
  • 2 avocados, halved lengthwise and thinly sliced
  • 1/4 cup thinly sliced scallions
