Chicken & Stuffing Casserole

- 6 cups cubed multigrain bread (1/2 inch; about 12 ounces)
- 1½ cups no-salt-added chicken broth
- 2 tablespoons cornstarch
- 4 tablespoons unsalted butter, divided
- 1 cup chopped yellow onion
- ½ cup chopped carrot
- ½ cup chopped celery
- 3 cups shredded cooked chicken breast
- 1 cup sour cream
- 1 teaspoon chopped fresh thyme
- 1 teaspoon poultry seasoning
- ¾ teaspoon kosher salt
- ½ teaspoon ground pepper
