After the Holidays Ham Bone Soup
A thrifty and flavorful soup made from a leftover ham bone, slow-simmered with beans and vegetables for a rich broth.
Ingredients
- 1 ham bone with some meat 1 small onion, finely chopped
- 1 (15 ounce) can whole peeled tomatoes with juice
- 1 (14 ounce) package frozen mixed vegetables, thawed
- 3 potatoes, peeled and diced 1 1/2 cups uncooked elbow macaroni
- 3/4 cup uncooked long grain rice 1 cup chopped cooked ham, or amount leftover
- 1 (10 ounce) can tomato sauce
